Marshmallow Popcorn Bars

It's only natural to crave popcorn when you spend your weekend cuddled on the couch watching movies. Since I have an incessant sweet tooth I decided to try making a sweet and salty treat. I found this marshmallow popcorn recipe in Real Simple Magazine. It's super easy and way too addicting. If you are on a gluten free diet these are a fun snack option for parties. However, avoid eating big portions if you are trying to loose weight.

Ingredients:
2 tablespoons unsalted butter, plus more for the dish
1/2 cup popcorn kernels or one 3.5-ounce package plain microwave popcorn
1 10-ounce bag marshmallows


Directions:
  1. Butter a 9-by-13-inch baking dish. Pop the popcorn according to the package directions.
  2. Melt the butter and marshmallows in a large saucepan over medium-low heat, stirring until smooth, 5 to 7 minutes.
  3. Fold in the popcorn until coated. Press into the prepared dish and let sit for 10 minutes before cutting into 24 bars.

With such a long weekend I would usually share a style post today, but with the rain and my lingering cold I spent most of the time indoors. On the bright side it gave me the opportunity to put together our new bookshelf from Ikea. I didn't want to overcrowd the bookshelf. Instead I mixed it up with magazines, books, knickknacks and pictures. Once we get boxes for storage and a new desk our spare room will be just about finished!

This weekend I am home sick with a cold. Luckily, it's gloomy outside and I feel content cuddled on the couch watching movies with a hot cup of tea. With all this free time I should be catching up on the insane amount of emails filling up my inbox, but instead I'm swept away in fantasy land. Yesterday, I watched Marie Antoinette and today I am watching Amélie. Both of these movies are whimsical and visually stunning. Once I have my strength back I plan to put together a new inspiration board full of these dreamy images.

Raw Donut Holes

Alright so these are nothing like real donut holes, but I pretend they are. Actually they are a lot more like granola bars, but without the granola. These hard to define raw vegan desserts are the perfect snack for after a work out or with your morning coffee. They're easy to make and you can play with the ingredients without messing them up. I used this recipe (Raw Pecan "Chocolate Chip" Cookie) but changed a few things based on what we had in the house.

Ingredients:
1 cup raw almond butter
20 pitted medjool dates, pitted
3/4 cup shredded, dried coconut flakes
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon cinnamon
1 cup pecans, chopped

1. Place dates into a food processor and mix until smooth
2. Add almond butter, pecans, coconut, salt, cinnamon, and vanilla and blend together
3. Using your hands or a spoon form mix into small round orbs
4. Refrigerate before eating. Makes approx 15-20 donut holes.

I just came across this recipe and I am eager to try it next time.
