{unexpected guest at dinner}
Here's the breakdown:
-Clean and slice1-2 sweet potatoes (depending on their size) into 1/2 inch to 3/4 inch thick pieces--we like them thicker.
-Season them with salt, pepper or a seasoning of your choice (we like 'Slap Your Momma') and bake them on a baking sheet in olive oil for around 10 min in a 450 degree oven. Toss them around at 10 minutes and cook for another 10 minutes or until brown on both sides. The darker and crispier the better.
-Make a easy salad. We just used what was in the fridge. We peeled and chopped cucumber, added chopped tomatoes and sliced avocado. Then we tossed them in a citrus olive oil with fresh dill and a little salt and pepper.
-Buy about a pound of grass fed beef, make them into patties and BBQ them for 15-20 minutes.
-Pour a small glass of wine and enjoy!
Healthy and easy.

What I really like about this post is the doggy!
Your quick dinner sounds like something that I would eat. Your doggy is so cute...
What is grass fed beef? I have never heard of it. Which is weird because where I live in Canada our province is known for it's beef, haha. Lettuce wraps is a good idea too.

Yummy! This is pretty standard in our fam too. Although we always do turkey burgers. And since the hubs has recently started importing & exporting wine... well, we're never without! Lucky me! :)

a very well-balanced dinner ~ especially with the wine! :)
This is my go to healthy meal too. But it's still so appealing because it's essentially a burger and fries without the fat.
Looks and sounds delicious. Love sweet potato fries!
I couldn't agree more! There's just nothing like such no-fuss recipes! DELICIOUS! :o)
