Marshmallow Popcorn Bars

It's only natural to crave popcorn when you spend your weekend cuddled on the couch watching movies. Since I have an incessant sweet tooth I decided to try making a sweet and salty treat. I found this marshmallow popcorn recipe in Real Simple Magazine. It's super easy and way too addicting. If you are on a gluten free diet these are a fun snack option for parties. However, avoid eating big portions if you are trying to loose weight.

Ingredients:
2 tablespoons unsalted butter, plus more for the dish
1/2 cup popcorn kernels or one 3.5-ounce package plain microwave popcorn
1 10-ounce bag marshmallows


Directions:
  1. Butter a 9-by-13-inch baking dish. Pop the popcorn according to the package directions.
  2. Melt the butter and marshmallows in a large saucepan over medium-low heat, stirring until smooth, 5 to 7 minutes.
  3. Fold in the popcorn until coated. Press into the prepared dish and let sit for 10 minutes before cutting into 24 bars.

I make something vaguely similar that we just called "treats." When you melt the marshmellows, also melt in 1/3 cup of peanut butter. Pour that mixture over a med bowl of pretzel sticks, m&ms, and chex cereal. (You can make the proportions however you like... I do a bag of m&ms, 2 cups of pretzel sticks, and 2 cups of chex.) Then you just press into a greased casserole pan and let it sit, then cut it into squares. It's probably even less healthy than the popcorn version and people think it looks weird, but I swear it's the best thing ever.
