Gluten Free Blueberry Muffins

I love the smell of:

*freshly cut lemons

*clean laundry

*gasoline

*wet shampooed hair

*Chanel Chance perfume

*vanilla anything

*sunscreen lotion

*babies

* blueberry muffins...

Blueberry muffins not only smell intoxicating, but are utterly delicious too. I have been dropping hints to my boyfriend to buy us a blueberry scented candle for weeks. Since he doesn't seem to have the same affinity to the scent as I do, I decided to bake him a healthier version to get him on board. These gluten free, no sugar added,  blueberry* muffins (recipe found here) are surprisingly tasty. I admit they don't have as fluffy of a texture as regular muffins, but for a healthier version I'll deal with it.

Many of you have been asking about my gluten free baking. I don't have celiac, but I do have IBS and cooking without a lot of sugar and gluten does seem to be easier on my stomach. I also like to cook vegan and raw because many times they are healthier. Not all the recipes on Sterling Style are gluten free or healthy. I like to mix it up and share something for everyone. For more information of my gluten free baking head to my Facebook discussion.

*The recipe allows for fozen blueberries, but I recommend fresh. The frozen give off too much water.

These look so delicious, I'm glad that you feature healthier alternatives on your blog, it inspires me to consider other ways of baking rather than your standard flour, sugar and butter!

Btw I have featured you in an inspiration board on my blog.
Have a lovely day.

it makes me happy that your blog doesnt just focus on fashion but just aspects of your life. I did have a fashion blog until I went gluten-free. I was misdiagnosed with IBS when I was 7 or 8 and cutting out gluten has changed my life. beautiful pictures & thanks for a gluten-free post!

There is nothing better than warm blueberry muffins straight out of the oven.

Fresh cut lemons and clean laundry make me laugh! Those are my two favorite things in the world too! (hence the blog name). Something about those scents just makes everything right and calm in the world.

These look incredible!!! And I am a muffin kind of girl. My last cupcakes I made called for an egg substitute and they turned out amazingly. I love new recipes and modifying them to fit one's daily diet. I've went to Bikram twice this week and would love for you to join me. You would totally love it!! Have I convinced you or we could just meet for a glass of wine ha, what a contrast! Hugs!

Taylor Sterling said...

ha ha Caroline. OOH you do the Bikram. I use to do that, but I am partial to power yoga with Erin, Melissa and a few others.

I want to go! I also want a glass of wine! Both! xo

Love this!

I just made HOMEMADE APPLE BUTTER & CANNED IT TOO! All the spices, fruit, and sugar combine to result in apple butter that is reminiscent of homemade apple pie. Amazing…I cannot describe how much I love this recipe!

Hey i love this post- I have ibs and eat a starch free diet which is even more restricting than gluten free- but the only way i stay well! ( seriously everything is starchy... like the glue that makes me poorly) Great idea to make these muffins although i cant sample them. I always bake but usually for others as pretty much the only cakey things that are suitable are meringues! Hope you are happier after all the support shown and so sorry to read on twitter about an unkind comment.xxWould love you to visit sometime. Katie.xx

Taylor these look great!! GF baking is not easy (I've lived w/celiac for about 4 years), but it most definitely is worth the rewards. Elana's pantry has some excellent recipes. I love her use of almond flour - so good!! Love the pics and the background info on why you're choosing the lifestyle :)

Hi Taylor! I have IBD- or more specifically, ulcerative colitis, and I have never heard of cutting out gluten to make you feel better, but now I have to try it! I'm kind of desperate for anything that will get rid of symptoms!

Thanks!

I've been meaning to make a switch over to wheat free, as I've heard great things about it's effects on autoimmune disorders. Do you find that it affects your energy levels at all?

Becca

Taylor Sterling said...

Becca,

I am not off wheat completely right now, but i think it dos take time to adjust to taking out sugar and wheat (if you do both. Are bodies can get addicted to starchy carbs and when we take them away it causes a dip in our energy, but then once we adjust and get use to it you actually feel better.

I just wish I was not as addicted as I am , b/c I always crave them!

Jamie said...

To answer your question, I am on a medication called Amitiza. I take it twice a day. It has been a godsend. It's not meant to take any more than that and it just keeps everything regular and no painful gas/bloating that I used to get everytime I ate ANYTHING! I stay away from processed foods, eat tons of fish, fruits, veggies and all gluten free (usually rice based) products which helps. I will go off course here and there and splurge on things like Coldstone (they have sugar free cake batter now! Weakness!!) but with this medication it's no problem AT ALL.
I was opposed to medication like this for a long time but I think it gets to a point when your just fed up with living like this! So once I reached it and finally took the meds, everything changed! Not sure what type of IBS you have or if this medication is right for your situation but it doesn't hurt to find out! :)
