A few weeks ago my boyfriend and I headed to our friends' beach house. It was a gorgeous day. We sat on their patio for hours taking in the ocean view. Even though that experience was glorious we couldn't stop thinking about the healthy and refreshing salad we were served for lunch. It was such a treat that we couldn't wait to put together the ingredients and we've literally been enjoying it for lunch every day since. I call this easy because it doesn't require any measurements and can work with many different combinations of ingredients. I like to add fresh fruit and avocado for more texture. Here's what we use to make a large bowl:
BBQ chicken (we usually cook it the night before)
Roasted Unsalted Almonds (chopped)
Parmesan Cheese (we buy the block and cut into cubes)
Lemon & Extra Virgin Olive Oil dressing (1 lemon and equal parts olive oil)
Play around with with the amounts to suit your taste. Mix and serve!
