Kale Chips

I love chips.What I don't love is feeling guilty after I've consumed an entire bag to myself. So when I heard that kale chips actually taste good I knew I had to try them immediately. They are very easy to make and taste like a mix between popcorn and baked chips. They don't have that bitter kale taste and are highly addictive. I used a recipe from Gwyenth Paltrow's cookbook but added some "Slap Your Mama" Cajun spice!

Printable Recipe

Ingredients:
1 bunch of kale
2 tablespoons olive oil
salt (and any other seasoning) to sprinkle

Directions:
1. Preheat oven to 400 degrees
2. Discard kale stems and wash thoroughly
3. Dry kale in a salad spinner or with paper towels
4. Tear kale into 1.5 inch pieces
5. In a large bowl mix dry kale with olive oil and sprinkle salt (just a pink or two- it's easy to over salt them) and mix
6. Spread kale out on two baking sheets
7. Cook for 10-15 minutes or until lightly browned
8. Eat and enjoy

I have been wanting to try this for ages! I'm glad to hear that they actually taste good, it gives me more incentive to satisfy my crunch cravings with something healthy. And Cajun spice sounds super yummy!

i'm addicted to kale chips. and i love that they're so simple to make...just oil, salt, pepper, bake and done! i don't even consider them an alternative to processed potato chips...they're so much better!

Last week I was experimenting with kale and made kale chips and while I thought they were okay (I get why people like 'em) I'm not completely sold on them! Which is too bad because I love the idea of them so much! Healthy chips? Yes, please! I also threw kale in a smoothie, and made kale & sweet potato soup... the soup was definitely the best combo of the 3! Love your food posts though!! Always so inspiring!

I discovered kale chips recently too. They're so addictive! I've been making my chips with sesame oil, Braggs, apple cider vinegar, and nutritional yeast. Tangy and delicious! This recipe seems so simple, I'll have to try it out soon.
