Paleo Pancakes

I often cook gluten free or vegan, but as of last week I am not eating any grains or gluten for 30 days. This is not to loose weight, but to see if it helps reduce my allergies. Many studies show that gluten and grains can make your allergies worse. If you want to learn more check out Robb Wolf's blog.  After seeing how healthy my boyfriend is after two years of eating this this way I feel it has to have benefits. Even though I am not going strict Paleo I have noticed that I am eating better and better each day. I allow one splurge day a week, but still leave out gluten. 

One thing that I am really enjoying is Paleo pancakes. They are the perfect substitute for bread in the morning and taste delicious with bananas and a little almond butter on top! We have been tweaking* with the recipe each time we make it, but an easy recipe can be found here.

*The recipe I linked is the best, The photos are from when I ran out of those ingredients and tried maple almond butter and coconut flour.

I think your brave for trying it out. I probably should do the same but I really can't live without bread. The Dutch eat bread twice a day!! haha

okay coconut oil is my miracle product. cook with it, use it as a body oil while bathing, use it as a moisturizer, use it as a hair conditioner. amazing.

I wish I could find all these fun flours, oils and butters in Sweden! Organic is huge here but it is all just regular things like milk. xoxo

This is a really interesting post. I've been wondering, since you have mentioned how important exercise is to you (bravo!), are you really health conscious about food also? I only ask because I've been looking over my diet and I just don't feel good about it and I was wondering what food choices you try to make? Thanks for the great info.

Paleo pancakes are my favorite! In fact, I'd rather eat the paleo pancakes than regular. With a little bit of straberries and agave syrup - YUM!

I ate Paleo for 3 months when I was on crutches and wanted to maintain my weight and couldn't work out. I ended up losing weight. I should go back on Paleo...it was definitely effective.

Yum! Those look pretty good. I've been struggling with what to eat for breakfast now that we're on a semi-paleo diet too... which eliminates all my favorite breakfast foods. I'll try these tomorrow!
