Gluten Free Coconut Macaroons

I love coconut. So, when I came across this recipe for coconut macaroons I knew I had to try it! At first the recipe seemed straightforward, but my first batch came out in gooey puddles. I started reading through the comments (now I know what to do first) and I saw that a lot of people were having troubles. I know I need to buy this almond flour to help, but until then I decided to use honey instead of agave oil. They ended up crispy and scrumptious. My boyfriend keeps asking me when we are having them again!

Ooo these look so tasty! I love that they're gluten free :) Would you ever consider a "What I Ate Today" sort of post? I know that Crossfit often recommends a paleo diet, and would love to learn how someone factors that in to real life!

Taylor these look awesome. Great job!! I have Celiac Disease and have to keep a gluten-free diet. Working with agave is tricky, isn't it? But it sure is healthy once it is mastered. Trial and error is the only way to go. I've finally perfected chocolate chip cookies...but still not with agave.

Thanks Carrie! I love cooking gluten free. I don't have celiac, but I have IBS and I notice when I eat less gluten I feel better. I am glad that you like the recipe. I have to try the choc chip cookies again. Mine came out all wonky and weird.
