Chicken, Cherries, Couscous and Kale

My dear readers, this is a miracle. I am learning how to cook meals, actual good meals. I am not known by the people who love me as an expert in the kitchen. My mom always says, "she can cook eggs and even those she just learned". I  am one of those girls who would rather paint her nails and read Vogue than slave over a meal in the kitchen. However, my boyfriend loves food, more like all he thinks about is food and (Crossfit). He is always patient with me and cooks my dinners and makes sure I get enough veggies. In an effort to be more involved in our meals I have been reading food blogs and magazines collecting recipes. 

During the week we like to eat clean and healthy sticking to fresh fish and vegetables, but on the weekend we splurge and experiment. This is a recipe from one of our favorite gluten free blogs Elana's Pantry. It is a delicious mixture of sweet cherries and tangy kale. We opted to ad couscous for a yummy buttery crunch, but if you want to stay gluten free it is still a great dish.

I think I may be turning a new leaf my friends. Please, leave me a comment with one of your favorite recipes and advice for my new hobby.

That's such a vibrant, visually appealing meal! One of my favourite methods is to cook things en papillote. It sounds fancy but is easy and such fun. Just use some parchment paper, creat a little bag, put in whatever you want, maybe fish and vegetables or even seafood, seal it and bake in the oven. It's almost no cooking yet you get a beautiful, healthy and delicious meal! Just be careful of the steam when you unwrap the parcel!

Quinoa! I just love it! It's a great basic that you can add so many yummy things too like roasted veg, almonds, the list goes on!

I love to cook and I stay inspired by subscribing to cooking magazines. I love the fancy ones but I also have subscriptions to Racheal Ray and Everyday Cooking because they have easy-to-execute ideas for daily cooking.
